Ingredients

  • Chicken thighs - 400 grams
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Fresh parsley - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a large bowl, mix the olive oil, lemon juice, minced garlic, chopped parsley, chopped cilantro, ground cumin, paprika, salt, and black pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, or up to overnight for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the excess marinade.
  5. Grill the chicken thighs for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the chicken is nicely charred.
  6. Remove the chicken from the grill and let it rest for 5 minutes before serving.
