Ingredients
- Cauliflower - 300 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Cinnamon - 1/4 teaspoon
- Allspice - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Start by washing and drying the cauliflower, then remove the leaves and stem.
- Using a food processor, pulse the cauliflower until it resembles rice grains. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic to the skillet and sauté for another minute until fragrant.
- Stir in the processed cauliflower rice and cook for about 5 minutes, stirring occasionally.
- Add the chopped parsley, mint, cinnamon, allspice, salt, and black pepper. Mix well and cook for an additional 3-4 minutes.
- Remove from heat and drizzle with lemon juice before serving.
