Ingredients

  • Cauliflower - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Cinnamon - 1/4 teaspoon
  • Allspice - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Start by washing and drying the cauliflower, then remove the leaves and stem.
  2. Using a food processor, pulse the cauliflower until it resembles rice grains. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  4. Add the minced garlic to the skillet and sauté for another minute until fragrant.
  5. Stir in the processed cauliflower rice and cook for about 5 minutes, stirring occasionally.
  6. Add the chopped parsley, mint, cinnamon, allspice, salt, and black pepper. Mix well and cook for an additional 3-4 minutes.
  7. Remove from heat and drizzle with lemon juice before serving.
