- Chickpeas - 200 grams (cooked)
- Quinoa - 50 grams (cooked)
- Red bell pepper - 1 (finely chopped)
- Red onion - 1/2 (finely chopped)
- Garlic - 2 cloves (minced)
- Harissa paste - 2 tablespoons
- Cilantro - 2 tablespoons (chopped)
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 (sliced)
- Avocado - 1/2 (sliced)
Steps
- In a mixing bowl, mash the cooked chickpeas with a fork or potato masher until slightly chunky.
- Add the cooked quinoa, red bell pepper, red onion, garlic, harissa paste, cilantro, cumin, salt, and black pepper to the bowl. Mix until well combined.
- Form the mixture into two equal-sized patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- Toast the whole wheat burger buns in the skillet for 1-2 minutes until lightly browned.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced tomato, and avocado. Top with the other half of the bun.
- Serve immediately with your favorite side.
