Ingredients

  • Zucchini - 2 medium
  • Harissa paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Bell pepper - 1 medium, diced
  • Spinach - 100 grams, fresh
  • Feta cheese - 50 grams, crumbled
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Spiralize the zucchini using a spiralizer to create 'zoodles' and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic, cooking for about 1 minute until fragrant.
  3. Add the diced bell pepper and cook for 3-4 minutes until softened.
  4. Stir in the cherry tomatoes and harissa paste, cooking for another 2-3 minutes until the tomatoes start to soften.
  5. Add the zoodles to the skillet and toss to combine with the sauce, cooking for an additional 2-3 minutes until just tender.
  6. Fold in the fresh spinach and cook until wilted, about 1-2 minutes.
  7. Season with salt and black pepper to taste, then remove from heat.
  8. Serve hot, topped with crumbled feta and fresh parsley.
