Ingredients

  • Semolina - 100 grams
  • Mozzarella cheese - 100 grams
  • Sugar - 50 grams
  • Water - 250 ml
  • Rose water - 1 tablespoon
  • Pistachios (crushed) - 30 grams
  • Butter - 20 grams
  • Vanilla extract - 1 teaspoon
  • Milk - 200 ml

Steps

  1. In a saucepan, combine the milk, sugar, and vanilla extract. Heat over medium heat until the sugar dissolves.
  2. Add the semolina to the milk mixture gradually, stirring continuously to avoid lumps. Cook for about 10 minutes until the mixture thickens.
  3. Remove from heat and fold in the mozzarella cheese and butter until fully combined and smooth.
  4. Spread the mixture evenly onto a greased plate or tray, smoothing the top with a spatula. Allow it to cool for about 15 minutes.
  5. While the mixture cools, prepare the syrup by combining water and sugar in a saucepan. Bring to a boil, then reduce heat and simmer for about 10 minutes until syrupy. Stir in rose water.
  6. Once the semolina and cheese mixture has cooled, cut it into squares or diamond shapes.
  7. Serve the pieces drizzled with the syrup and sprinkle crushed pistachios on top.
