- Mushrooms - 150 grams, whole or halved
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Fresh parsley - a handful, chopped (for garnish)
Steps
- In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, salt, and black pepper to create the marinade.
- Add all the cut vegetables (bell peppers, zucchini, red onion, cherry tomatoes, and mushrooms) to the bowl, tossing them gently to ensure they are well coated with the marinade.
- Cover the bowl with plastic wrap and let the vegetables marinate in the refrigerator for at least 15 minutes.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated vegetables onto skewers, alternating the types of vegetables for color and variety.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and have grill marks.
- Remove the skewers from the grill and let them cool for a minute before serving.
