  • Mushrooms - 150 grams, whole or halved
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh parsley - a handful, chopped (for garnish)

Steps

  1. In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, salt, and black pepper to create the marinade.
  2. Add all the cut vegetables (bell peppers, zucchini, red onion, cherry tomatoes, and mushrooms) to the bowl, tossing them gently to ensure they are well coated with the marinade.
  3. Cover the bowl with plastic wrap and let the vegetables marinate in the refrigerator for at least 15 minutes.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Thread the marinated vegetables onto skewers, alternating the types of vegetables for color and variety.
