- Zucchini - 100 grams, sliced
- Red bell pepper - 100 grams, sliced
- Eggplant - 100 grams, sliced
- Red onion - 50 grams, sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 100 grams, cooked and mashed
- Fresh parsley - 2 tablespoons, chopped
- Tahini - 1 tablespoon
- Lemon juice - 1 tablespoon
- Whole wheat pita bread - 2 pieces
- Lettuce leaves - 2 pieces
Steps
- Preheat the grill or a grill pan over medium-high heat.
- In a bowl, combine zucchini, red bell pepper, eggplant, red onion, garlic, olive oil, cumin, paprika, salt, and black pepper. Toss until vegetables are well coated.
- Place the vegetables on the grill and cook for about 5-7 minutes on each side, until they are tender and have nice grill marks.
- While the vegetables are grilling, mix the mashed chickpeas, parsley, tahini, and lemon juice in a separate bowl to create a spread.
- Once the vegetables are done, remove them from the grill and let them cool slightly.
- To assemble the burgers, spread the chickpea mixture on the pita bread, layer with grilled vegetables, and add lettuce leaves.
- Fold the pita or place the toppings on a bun, if preferred, and serve immediately.
