Ingredients

  • Zucchini - 100 grams, sliced
  • Red bell pepper - 100 grams, sliced
  • Eggplant - 100 grams, sliced
  • Red onion - 50 grams, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 100 grams, cooked and mashed
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Whole wheat pita bread - 2 pieces
  • Lettuce leaves - 2 pieces

Steps

  1. Preheat the grill or a grill pan over medium-high heat.
  2. In a bowl, combine zucchini, red bell pepper, eggplant, red onion, garlic, olive oil, cumin, paprika, salt, and black pepper. Toss until vegetables are well coated.
  3. Place the vegetables on the grill and cook for about 5-7 minutes on each side, until they are tender and have nice grill marks.
  4. While the vegetables are grilling, mix the mashed chickpeas, parsley, tahini, and lemon juice in a separate bowl to create a spread.
  5. Once the vegetables are done, remove them from the grill and let them cool slightly.
  6. To assemble the burgers, spread the chickpea mixture on the pita bread, layer with grilled vegetables, and add lettuce leaves.
  7. Fold the pita or place the toppings on a bun, if preferred, and serve immediately.
