Ingredients

  • Red bell pepper - 1 large
  • Yellow bell pepper - 1 large
  • Green bell pepper - 1 large
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the grill to medium-high heat.
  2. Wash and core the bell peppers, then cut them into quarters.
  3. In a mixing bowl, combine minced garlic, olive oil, lemon juice, ground cumin, paprika, salt, and black pepper to create a marinade.
  4. Add the bell pepper quarters to the marinade and toss until well coated.
  5. Allow the peppers to marinate for at least 10 minutes.
  6. Place the marinated peppers on the grill, skin-side down, and grill for about 5-7 minutes per side, until they are tender and have nice grill marks.
  7. Remove the peppers from the grill and let them cool slightly.
