  • Cherry tomatoes - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (for garnish)

Steps

  1. Preheat the grill or grill pan over medium heat.
  2. Cut the halloumi cheese into 2 cm cubes.
  3. Slice the zucchini into thick rounds and cut the red bell pepper into 2 cm pieces.
  4. In a bowl, combine olive oil, garlic powder, paprika, lemon juice, salt, and black pepper to create a marinade.
  5. Add the halloumi, zucchini, red bell pepper, and cherry tomatoes to the marinade, tossing to coat evenly.
  6. Let the mixture marinate for 10 minutes while the grill heats up.
  7. Thread the marinated halloumi and vegetables onto skewers, alternating between halloumi and vegetables.
  8. Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the halloumi is golden and soft.
