- Red onion - 1/4 (approximately 30 grams)
- Olive oil - 2 tablespoons (30 ml)
- Lemon juice - 1 tablespoon (15 ml)
- Fresh mint leaves - 1/4 cup (about 10 grams)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your grill or grill pan over medium heat.
- Slice the halloumi cheese into 1 cm thick slices.
- Grill the halloumi slices for about 2-3 minutes on each side until golden brown and slightly crispy.
- While the halloumi is grilling, wash and prepare the salad greens, cherry tomatoes, cucumber, and red onion.
- In a large bowl, combine the mixed salad greens, halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
- Once the halloumi is grilled, remove it from the heat and let it cool slightly before adding it to the salad.
- Pour the dressing over the salad, toss gently to combine, and add the fresh mint leaves.
