Ingredients

  • Halloumi cheese - 200 grams
  • Mixed salad greens (arugula, spinach, and romaine) - 100 grams
  • Cherry tomatoes - 150 grams
  • Cucumber - 1 medium (approximately 150 grams)
  • Red onion - 1/4 (approximately 30 grams)
  • Olive oil - 2 tablespoons (30 ml)
  • Lemon juice - 1 tablespoon (15 ml)
  • Fresh mint leaves - 1/4 cup (about 10 grams)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. Slice the halloumi cheese into 1 cm thick slices.
  3. Grill the halloumi slices for about 2-3 minutes on each side until golden brown and slightly crispy.
  4. While the halloumi is grilling, wash and prepare the salad greens, cherry tomatoes, cucumber, and red onion.
  5. In a large bowl, combine the mixed salad greens, halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
  7. Once the halloumi is grilled, remove it from the heat and let it cool slightly before adding it to the salad.
  8. Pour the dressing over the salad, toss gently to combine, and add the fresh mint leaves.
  9. Serve immediately, garnished with extra mint leaves if desired.
