Ingredients

  • Zucchini - 2 medium, spiralized
  • Halloumi cheese - 200 grams, sliced
  • Cherry tomatoes - 200 grams, halved
  • Bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a grill or grill pan over medium heat.
  2. In a bowl, combine the spiralized zucchini, halved cherry tomatoes, diced bell pepper, minced garlic, olive oil, lemon juice, salt, and black pepper. Toss well to coat.
  3. Place the halloumi slices on the grill and cook for about 2-3 minutes on each side until golden brown and slightly charred.
