Ingredients
- Zucchini - 2 medium, spiralized
- Halloumi cheese - 200 grams, sliced
- Cherry tomatoes - 200 grams, halved
- Bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat a grill or grill pan over medium heat.
- In a bowl, combine the spiralized zucchini, halved cherry tomatoes, diced bell pepper, minced garlic, olive oil, lemon juice, salt, and black pepper. Toss well to coat.
- Place the halloumi slices on the grill and cook for about 2-3 minutes on each side until golden brown and slightly charred.
