Ingredients

  • Halloumi cheese - 250 grams
  • Whole wheat burger buns - 2
  • Olive oil - 2 tablespoons
  • Fresh mint leaves - 10 leaves, chopped
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon
  • Hummus - 4 tablespoons
  • Cucumber - 1 small, sliced
  • Tomato - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a grill or grill pan over medium heat.
  2. Slice the halloumi cheese into 1.5 cm thick slices.
  3. Brush the halloumi slices with olive oil on both sides, and season with salt and black pepper.
  4. Grill the halloumi slices for about 2-3 minutes on each side, or until golden brown and slightly crispy.
  5. While the halloumi is grilling, prepare the sauce by mixing chopped mint, minced garlic, lemon juice, salt, and black pepper in a small bowl.
  6. Toast the whole wheat burger buns on the grill for 1-2 minutes until lightly golden.
  7. Spread 2 tablespoons of hummus on the bottom half of each toasted bun.
  8. Layer grilled halloumi slices on top of the hummus, followed by cucumber slices, tomato slices, and red onion.
