- Basmati rice - 150 grams
- Large onion - 1, finely sliced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon, divided
- Black pepper - 1/2 teaspoon
- Olive oil - 3 tablespoons
- Lemon - 1, juiced
- Fresh parsley - 2 tablespoons, chopped
- Water - 300 ml
Steps
- In a pan, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until golden brown, about 10-12 minutes.
- Add the minced garlic, cumin, coriander, turmeric, salt, and pepper to the onions and cook for an additional 2 minutes until fragrant.
- Stir in the basmati rice and cook for 2 more minutes, allowing the rice to absorb the flavors.
- Pour in the water, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, marinate the fish fillets with lemon juice, remaining olive oil, salt, and pepper for 10 minutes.
- Preheat the grill or grill pan over medium-high heat. Grill the fish for about 3-4 minutes on each side or until cooked through and flaky.
