- Fish fillets (white fish, such as sea bass) - 300 grams
- Basmati rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Lemon juice - 2 tablespoons
- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 300 milliliters
- Fresh parsley - for garnish
- Tahini - 2 tablespoons
- Water - 2 tablespoons
Steps
- In a bowl, combine olive oil, lemon juice, cumin, coriander, turmeric, paprika, salt, and black pepper to create a marinade.
- Add the fish fillets to the marinade, ensuring they are well coated. Let them marinate for at least 20 minutes.
- In a pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the basmati rice to the pot, stirring for a couple of minutes until the rice is slightly toasted.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and liquid is absorbed.
- Meanwhile, preheat the grill to medium-high heat. Grill the marinated fish for about 4-5 minutes per side, or until cooked through and flaky.
- For the tahini sauce, mix tahini with water until smooth and creamy. Adjust the consistency by adding more water if needed.
- Serve the grilled fish over the spiced rice, drizzled with tahini sauce and garnished with fresh parsley.
