Ingredients

  • Fish fillets (white fish, such as sea bass) - 300 grams
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 300 milliliters
  • Fresh parsley - for garnish
  • Tahini - 2 tablespoons
  • Water - 2 tablespoons

Steps

  1. In a bowl, combine olive oil, lemon juice, cumin, coriander, turmeric, paprika, salt, and black pepper to create a marinade.
  2. Add the fish fillets to the marinade, ensuring they are well coated. Let them marinate for at least 20 minutes.
  3. In a pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Add the basmati rice to the pot, stirring for a couple of minutes until the rice is slightly toasted.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and liquid is absorbed.
  6. Meanwhile, preheat the grill to medium-high heat. Grill the marinated fish for about 4-5 minutes per side, or until cooked through and flaky.
  7. For the tahini sauce, mix tahini with water until smooth and creamy. Adjust the consistency by adding more water if needed.
  8. Serve the grilled fish over the spiced rice, drizzled with tahini sauce and garnished with fresh parsley.
