Ingredients
- White fish fillets (e.g., cod or haddock) - 300 grams
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Basmati rice - 150 grams
- Onion - 1 medium, thinly sliced
- Vegetable broth - 400 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Pine nuts - 30 grams, toasted
Steps
- In a bowl, combine olive oil, lemon juice, minced garlic, cumin, coriander, salt, and black pepper. Add the fish fillets and marinate for at least 15 minutes.
- While the fish is marinating, rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook until caramelized, about 8-10 minutes, stirring frequently.
- Add the rinsed rice to the caramelized onions and stir for 2 minutes to toast the rice slightly.
- Pour in the vegetable broth, bring to a boil, then reduce heat to low, cover, and cook for 15 minutes or until the rice is tender and broth is absorbed.
- While the rice is cooking, preheat the grill or a grill pan over medium-high heat. Grill the marinated fish fillets for about 3-4 minutes on each side, or until cooked through and flaky.
- Once the rice is cooked, fluff it with a fork and stir in the chopped parsley.
- To serve, place a generous amount of the rice on each plate, top with grilled fish, and sprinkle with toasted pine nuts.
