Ingredients

  • White fish fillets (e.g., cod or haddock) - 300 grams
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Basmati rice - 150 grams
  • Onion - 1 medium, thinly sliced
  • Vegetable broth - 400 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 30 grams, toasted

Steps

  1. In a bowl, combine olive oil, lemon juice, minced garlic, cumin, coriander, salt, and black pepper. Add the fish fillets and marinate for at least 15 minutes.
  2. While the fish is marinating, rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
  3. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook until caramelized, about 8-10 minutes, stirring frequently.
  4. Add the rinsed rice to the caramelized onions and stir for 2 minutes to toast the rice slightly.
  5. Pour in the vegetable broth, bring to a boil, then reduce heat to low, cover, and cook for 15 minutes or until the rice is tender and broth is absorbed.
  6. While the rice is cooking, preheat the grill or a grill pan over medium-high heat. Grill the marinated fish fillets for about 3-4 minutes on each side, or until cooked through and flaky.
  7. Once the rice is cooked, fluff it with a fork and stir in the chopped parsley.
  8. To serve, place a generous amount of the rice on each plate, top with grilled fish, and sprinkle with toasted pine nuts.
