Ingredients

  • Zucchini - 100 grams
  • Eggplant - 100 grams
  • Bell pepper (red or yellow) - 100 grams
  • Cherry tomatoes - 100 grams
  • Firm tofu - 200 grams
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pita bread - 2 pieces

Steps

  1. Preheat the grill to medium-high heat.
  2. Cut the zucchini, eggplant, and bell pepper into bite-sized pieces and place them in a bowl.
  3. In a separate bowl, mix olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper.
  4. Pour the marinade over the vegetables and toss until well coated. Let it marinate for 10 minutes.
  5. While the vegetables marinate, press the tofu to remove excess moisture, then cut it into thick slices.
  6. Brush the tofu slices with the remaining marinade and set aside.
  7. Place the marinated vegetables and tofu on the grill. Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.
  8. Grill the tofu for about 4-5 minutes on each side, until golden brown.
  9. While grilling, place the pita bread on the grill for the last 2 minutes to warm them up.
  10. Once everything is cooked, remove from the grill and arrange the grilled vegetables and tofu on a platter. Garnish with chopped parsley.
  11. Serve with warm pita bread.
