Ingredients
- Zucchini - 100 grams
- Eggplant - 100 grams
- Bell pepper (red or yellow) - 100 grams
- Cherry tomatoes - 100 grams
- Firm tofu - 200 grams
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Pita bread - 2 pieces
Steps
- Preheat the grill to medium-high heat.
- Cut the zucchini, eggplant, and bell pepper into bite-sized pieces and place them in a bowl.
- In a separate bowl, mix olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper.
- Pour the marinade over the vegetables and toss until well coated. Let it marinate for 10 minutes.
- While the vegetables marinate, press the tofu to remove excess moisture, then cut it into thick slices.
- Brush the tofu slices with the remaining marinade and set aside.
- Place the marinated vegetables and tofu on the grill. Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.
- Grill the tofu for about 4-5 minutes on each side, until golden brown.
- While grilling, place the pita bread on the grill for the last 2 minutes to warm them up.
- Once everything is cooked, remove from the grill and arrange the grilled vegetables and tofu on a platter. Garnish with chopped parsley.
- Serve with warm pita bread.
