Ingredients
- Eggplant - 1 medium (about 250g)
- Ground chicken - 200g
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Cinnamon - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50g, crumbled
- Lemon juice - 1 tablespoon
Steps
- Preheat the grill to medium-high heat.
- Slice the eggplant lengthwise into 1/2-inch thick slices and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture.
- In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the minced garlic until fragrant, about 1 minute.
- Add the ground chicken to the skillet and cook until browned and fully cooked, about 5-7 minutes. Stir in the chopped parsley, cinnamon, cumin, salt, and black pepper. Remove from heat and let it cool slightly.
- Once the chicken mixture is cool, stir in the crumbled feta cheese and lemon juice.
- Rinse and pat dry the salted eggplant slices, then brush both sides with the remaining tablespoon of olive oil.
- Grill the eggplant slices for about 3-4 minutes on each side until tender and grill marks appear.
- Remove the eggplant from the grill and place about 2 tablespoons of the chicken mixture at one end of each slice. Roll the eggplant around the filling and secure with a toothpick if necessary.
- Return the rolls to the grill for another 2-3 minutes to warm the filling and achieve a nice char.
- Serve warm with a drizzle of olive oil and a sprinkle of fresh parsley on top.
