Ingredients

  • Eggplant - 1 medium (about 250g)
  • Ground chicken - 200g
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50g, crumbled
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the grill to medium-high heat.
  2. Slice the eggplant lengthwise into 1/2-inch thick slices and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture.
  3. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the minced garlic until fragrant, about 1 minute.
  4. Add the ground chicken to the skillet and cook until browned and fully cooked, about 5-7 minutes. Stir in the chopped parsley, cinnamon, cumin, salt, and black pepper. Remove from heat and let it cool slightly.
  5. Once the chicken mixture is cool, stir in the crumbled feta cheese and lemon juice.
  6. Rinse and pat dry the salted eggplant slices, then brush both sides with the remaining tablespoon of olive oil.
  7. Grill the eggplant slices for about 3-4 minutes on each side until tender and grill marks appear.
  8. Remove the eggplant from the grill and place about 2 tablespoons of the chicken mixture at one end of each slice. Roll the eggplant around the filling and secure with a toothpick if necessary.
  9. Return the rolls to the grill for another 2-3 minutes to warm the filling and achieve a nice char.
  10. Serve warm with a drizzle of olive oil and a sprinkle of fresh parsley on top.
