  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Fresh mint - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a medium pot over medium heat.
  2. Add the chopped onion, carrot, and celery, sautéing until the vegetables are soft, about 5-7 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the fresh green peas and vegetable broth, bringing the mixture to a boil.
  5. Reduce the heat and let it simmer for about 15 minutes, until the peas are tender.
  6. Remove the pot from heat, and using an immersion blender, blend the soup until smooth.
  7. Stir in the chopped mint, lemon juice, salt, and black pepper.
