Ingredients

  • Fresh green beans - 250 grams
  • Ripe tomatoes - 2 medium (about 300 grams)
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Trim the ends of the green beans and wash them thoroughly.
  2. Bring a pot of salted water to a boil and blanch the green beans for about 3-4 minutes until bright green and tender-crisp.
  3. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Set aside.
  4. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  5. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  6. Chop the ripe tomatoes and add them to the skillet. Stir well and cook for about 5-7 minutes until the tomatoes break down and form a sauce.
  7. Season the tomato mixture with salt and black pepper. Add the blanched green beans to the skillet and mix well to coat them in the sauce.
  8. Cook for another 5 minutes, stirring occasionally, until the green beans are heated through.
  9. Remove from heat and stir in the fresh parsley and lemon juice before serving. Enjoy warm.
