- Fresh green beans - 250 grams
- Ripe tomatoes - 2 medium (about 300 grams)
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Trim the ends of the green beans and wash them thoroughly.
- Bring a pot of salted water to a boil and blanch the green beans for about 3-4 minutes until bright green and tender-crisp.
- Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Chop the ripe tomatoes and add them to the skillet. Stir well and cook for about 5-7 minutes until the tomatoes break down and form a sauce.
- Season the tomato mixture with salt and black pepper. Add the blanched green beans to the skillet and mix well to coat them in the sauce.
- Cook for another 5 minutes, stirring occasionally, until the green beans are heated through.
- Remove from heat and stir in the fresh parsley and lemon juice before serving. Enjoy warm.
