- Green beans - 200 grams
- Cherry tomatoes - 100 grams
- Red onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Trim the ends of the green beans and cut them into 5 cm pieces.
- Bring a pot of salted water to a boil and blanch the green beans for 3-4 minutes until bright green and tender-crisp.
- Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for about 2 minutes, then drain again.
- In a large mixing bowl, combine the blanched green beans, chopped cherry tomatoes, red onion, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
