Ingredients

  • Green beans - 200 grams
  • Cherry tomatoes - 100 grams
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Trim the ends of the green beans and cut them into 5 cm pieces.
  2. Bring a pot of salted water to a boil and blanch the green beans for 3-4 minutes until bright green and tender-crisp.
  3. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for about 2 minutes, then drain again.
  4. In a large mixing bowl, combine the blanched green beans, chopped cherry tomatoes, red onion, parsley, and mint.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  6. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
  7. Let the salad sit for about 5 minutes to allow the flavors to meld before serving.
