- Erythritol - 30g (or to taste)
- Vanilla extract - 1 tsp
- Salt - a pinch
- Whole blanched almonds - 4 (for decoration)
Steps
- Preheat the oven to 160°C (320°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the softened unsalted butter and erythritol, and beat until creamy and well combined.
- Add the almond flour, vanilla extract, and a pinch of salt to the butter mixture. Mix until a soft dough forms.
- Divide the dough into 8 equal pieces and shape each piece into a ball. Flatten slightly and place on the prepared baking sheet.
- Press a whole blanched almond into the center of each cookie.
- Bake in the preheated oven for about 15-20 minutes, or until the edges are lightly golden.
- Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
