Ingredients

  • Zucchini - 2 medium (approximately 400g)
  • All-purpose flour - 100g
  • Cornstarch - 50g
  • Garlic powder - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • Egg - 1 large
  • Water - 100ml
  • Vegetable oil - for frying

Steps

  1. Wash and trim the zucchini, then slice them into rounds about 1/2 cm thick.
  2. In a large bowl, combine the flour, cornstarch, garlic powder, ground cumin, salt, black pepper, and baking powder.
  3. In a separate bowl, whisk the egg and water together until well combined.
  4. Gradually add the egg mixture to the dry ingredients, stirring until you have a smooth batter.
  5. Heat vegetable oil in a deep frying pan over medium heat until hot (about 180°C).
  6. Dip each zucchini slice into the batter, ensuring it is fully coated, then carefully place it in the hot oil.
  7. Fry the zucchini in batches for about 3-4 minutes per side or until golden brown and crispy.
  8. Use a slotted spoon to remove the fried zucchini and drain on paper towels to remove excess oil.
  9. Serve hot, garnished with fresh parsley or a squeeze of lemon if desired.
