Ingredients

  • Potatoes - 500 grams
  • Olive oil - 4 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Peel the potatoes and cut them into 1 cm thick slices or wedges.
  2. In a large pot, bring water to a boil and add a pinch of salt. Add the potato slices and blanch for 5 minutes until slightly tender.
  3. Drain the potatoes and let them cool for a few minutes.
  4. In a large frying pan, heat the olive oil over medium heat.
  5. Add the blanched potatoes to the pan and fry for about 10-15 minutes, turning occasionally until they are golden and crispy.
  6. Add the minced garlic, paprika, cumin, salt, and black pepper to the pan, stirring gently to coat the potatoes evenly. Cook for an additional 2-3 minutes.
  7. Remove the potatoes from the heat and transfer them to a serving plate. Garnish with chopped fresh parsley before serving.
