Ingredients
- all-purpose flour - 200 grams
- water - 100 milliliters
- salt - 1 teaspoon
- olive oil - 2 tablespoons
- potatoes - 200 grams
- onion - 1 small, finely chopped
- garlic - 1 clove, minced
- ground cumin - 1/2 teaspoon
- ground coriander - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- fresh parsley - 2 tablespoons, chopped
- vegetable oil - for frying
Steps
- In a mixing bowl, combine the all-purpose flour, water, salt, and olive oil. Knead until the dough is smooth and elastic. Cover and let it rest for 20 minutes.
- While the dough is resting, peel and boil the potatoes in salted water until tender, about 15 minutes. Drain and mash them in a bowl.
- In a pan, heat a little olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the sautéed onion and garlic to the mashed potatoes along with ground cumin, ground coriander, black pepper, and chopped parsley. Mix well to combine.
- Divide the dough into 4 equal portions. Roll each portion into a thin circle on a floured surface.
- Place a tablespoon of the potato filling in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
- In a deep pan, heat vegetable oil over medium heat. Fry the pastries in batches until golden brown, about 3-4 minutes per side.
- Remove the fried pastries and place them on paper towels to drain excess oil. Serve hot.
