Ingredients

  • all-purpose flour - 200 grams
  • water - 100 milliliters
  • salt - 1 teaspoon
  • olive oil - 2 tablespoons
  • potatoes - 200 grams
  • onion - 1 small, finely chopped
  • garlic - 1 clove, minced
  • ground cumin - 1/2 teaspoon
  • ground coriander - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • vegetable oil - for frying

Steps

  1. In a mixing bowl, combine the all-purpose flour, water, salt, and olive oil. Knead until the dough is smooth and elastic. Cover and let it rest for 20 minutes.
  2. While the dough is resting, peel and boil the potatoes in salted water until tender, about 15 minutes. Drain and mash them in a bowl.
  3. In a pan, heat a little olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  4. Add the sautéed onion and garlic to the mashed potatoes along with ground cumin, ground coriander, black pepper, and chopped parsley. Mix well to combine.
  5. Divide the dough into 4 equal portions. Roll each portion into a thin circle on a floured surface.
  6. Place a tablespoon of the potato filling in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
  7. In a deep pan, heat vegetable oil over medium heat. Fry the pastries in batches until golden brown, about 3-4 minutes per side.
  8. Remove the fried pastries and place them on paper towels to drain excess oil. Serve hot.
