Ingredients
- Fine bulgur wheat - 100 grams
- Ground beef or lamb - 250 grams
- Onion - 1 medium, finely chopped
- Pine nuts - 30 grams, toasted
- Ground cinnamon - 1/2 teaspoon
- Ground allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 250 ml
- Olive oil - for frying
- Fresh parsley - for garnish
Steps
- Soak the bulgur wheat in 250 ml of water for 30 minutes until softened, then drain any excess water.
- In a skillet over medium heat, sauté the chopped onion in a little olive oil until translucent. Add the ground meat and cook until browned, breaking it apart as it cooks.
- Stir in the toasted pine nuts, cinnamon, allspice, salt, and black pepper. Remove from heat and let the mixture cool.
- In a large bowl, combine the soaked bulgur wheat with the cooled meat mixture. Mix thoroughly until well combined.
- Shape the kibbeh mixture into oval patties, about the size of an egg.
- Heat olive oil in a frying pan over medium heat. Once hot, carefully add the kibbeh patties in batches and fry until golden brown on all sides, about 4-5 minutes per side.
- Remove the fried kibbeh and drain on paper towels. Serve hot, garnished with fresh parsley.
