Ingredients
- Halloumi cheese - 200 grams
- Olive oil - 2 tablespoons
- Cherry tomatoes - 150 grams, halved
- Cucumber - 1 medium, diced
- Fresh mint leaves - 10 grams, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Slice the Halloumi cheese into 1 cm thick slices.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Once the oil is hot, add the Halloumi slices to the skillet and fry for 2-3 minutes on each side until golden brown.
- While the Halloumi is frying, prepare the salad by combining the halved cherry tomatoes, diced cucumber, chopped mint leaves, lemon juice, salt, and black pepper in a bowl. Mix well.
- Remove the fried Halloumi from the skillet and place on a paper towel to absorb excess oil.
- Serve the fried Halloumi warm, alongside the fresh salad.
