Ingredients
- White fish fillets (such as cod or haddock) - 300 grams
- Long-grain rice - 150 grams
- Onion - 1 medium, finely sliced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 3 tablespoons
- Water - 400 milliliters
- Lemon - 1, for serving
- Fresh parsley - a handful, chopped, for garnish
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and sauté until golden brown and caramelized, about 10-12 minutes.
- Remove half of the caramelized onions from the skillet and set aside for garnish later.
- Add minced garlic, cumin, coriander, turmeric, salt, and pepper to the skillet with the remaining onions. Stir for 1-2 minutes until fragrant.
- Drain the soaked rice and add it to the skillet, stirring to coat the rice in the onion and spice mixture.
- Pour in 400 ml of water, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, season the fish fillets with salt and pepper. In another skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Fry the fish fillets for about 3-4 minutes on each side, until golden and cooked through. Remove from heat.
- Fluff the rice with a fork and serve it on plates topped with the fried fish, reserved caramelized onions, and chopped parsley.
- Serve with lemon wedges on the side.
