Ingredients

  • White fish fillets (such as cod or haddock) - 300 grams
  • Long-grain rice - 150 grams
  • Onion - 1 medium, finely sliced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 3 tablespoons
  • Water - 400 milliliters
  • Lemon - 1, for serving
  • Fresh parsley - a handful, chopped, for garnish

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and sauté until golden brown and caramelized, about 10-12 minutes.
  3. Remove half of the caramelized onions from the skillet and set aside for garnish later.
  4. Add minced garlic, cumin, coriander, turmeric, salt, and pepper to the skillet with the remaining onions. Stir for 1-2 minutes until fragrant.
  5. Drain the soaked rice and add it to the skillet, stirring to coat the rice in the onion and spice mixture.
  6. Pour in 400 ml of water, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and water is absorbed.
  7. While the rice is cooking, season the fish fillets with salt and pepper. In another skillet, heat 1 tablespoon of olive oil over medium-high heat.
  8. Fry the fish fillets for about 3-4 minutes on each side, until golden and cooked through. Remove from heat.
  9. Fluff the rice with a fork and serve it on plates topped with the fried fish, reserved caramelized onions, and chopped parsley.
  10. Serve with lemon wedges on the side.
