Ingredients

  • White fish fillets (such as cod or haddock) - 300 grams
  • Long-grain rice - 1 cup (200 grams)
  • Onion - 1 large, thinly sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 4 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Water - 2 cups (500 ml)
  • Lemon - 1, cut into wedges for serving
  • Fresh parsley - for garnish

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook until they are golden and caramelized, about 10-15 minutes. Remove half for garnishing later.
  3. Add the minced garlic, cumin, coriander, cinnamon, salt, and pepper to the remaining onions in the skillet, stirring for 1-2 minutes until fragrant.
  4. Drain the soaked rice and add it to the skillet, stirring to coat the rice with the spices and onion mixture.
  5. Add the water and saffron to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and water is absorbed. Fluff with a fork and keep warm.
  6. Meanwhile, season the fish fillets with salt and pepper. Heat the remaining olive oil in another skillet over medium-high heat.
  7. Fry the fish fillets for about 3-4 minutes on each side, or until golden brown and cooked through. Remove from the pan and drain on paper towels.
  8. To serve, place a generous portion of the spiced rice on each plate, top with the fried fish, and garnish with the reserved caramelized onions and fresh parsley. Serve with lemon wedges.
