Ingredients

  • White fish fillets (such as cod or haddock) - 300 grams
  • Cauliflower - 1 medium head (about 500 grams)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Coconut flour - 1/4 cup
  • Egg - 1, beaten
  • Olive oil - 4 tablespoons (for frying)
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Start by preparing the cauliflower rice: Remove the leaves and stem from the cauliflower and cut it into small florets. In a food processor, pulse the florets until they resemble rice grains. Set aside.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic, cumin, coriander, paprika, salt, and black pepper, and cook for another 2 minutes until fragrant.
  3. Add the cauliflower rice to the skillet and stir well to combine. Cook for about 8-10 minutes, stirring occasionally, until the cauliflower is tender. Remove from heat and keep warm.
  4. Prepare the fish: Pat the fish fillets dry with paper towels. Season with salt and pepper on both sides.
  5. Set up a breading station: Place the coconut flour in a shallow dish and the beaten egg in another dish. Dip each fish fillet into the egg, then coat with coconut flour, ensuring they are well covered.
  6. In a separate skillet, heat the remaining olive oil over medium-high heat. Once hot, carefully place the breaded fish fillets in the skillet. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove from the skillet and drain on paper towels.
  7. To serve, plate the spiced cauliflower rice and top it with the crispy fried fish. Drizzle lemon juice over the fish and garnish with chopped parsley.
