Ingredients
- White fish fillets (such as cod or haddock) - 300 grams
- Cauliflower - 1 medium head (about 500 grams)
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Coconut flour - 1/4 cup
- Egg - 1, beaten
- Olive oil - 4 tablespoons (for frying)
- Lemon - 1, juiced
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Start by preparing the cauliflower rice: Remove the leaves and stem from the cauliflower and cut it into small florets. In a food processor, pulse the florets until they resemble rice grains. Set aside.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic, cumin, coriander, paprika, salt, and black pepper, and cook for another 2 minutes until fragrant.
- Add the cauliflower rice to the skillet and stir well to combine. Cook for about 8-10 minutes, stirring occasionally, until the cauliflower is tender. Remove from heat and keep warm.
- Prepare the fish: Pat the fish fillets dry with paper towels. Season with salt and pepper on both sides.
- Set up a breading station: Place the coconut flour in a shallow dish and the beaten egg in another dish. Dip each fish fillet into the egg, then coat with coconut flour, ensuring they are well covered.
- In a separate skillet, heat the remaining olive oil over medium-high heat. Once hot, carefully place the breaded fish fillets in the skillet. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove from the skillet and drain on paper towels.
- To serve, plate the spiced cauliflower rice and top it with the crispy fried fish. Drizzle lemon juice over the fish and garnish with chopped parsley.
