Ingredients

  • White fish fillets (e.g., cod or haddock) - 300 grams
  • Cauliflower - 1 medium head
  • Onion - 1 large, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 4 tablespoons
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the fish fillets under cold water and pat dry with paper towels. Season with salt, black pepper, and half of the lemon juice. Set aside.
  2. Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Set aside.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic, cumin, coriander, and paprika to the skillet, stirring for 1 minute until fragrant.
  5. Add the cauliflower rice to the skillet, mixing thoroughly. Cook for 8-10 minutes, stirring occasionally, until the cauliflower is tender. Season with salt and pepper to taste.
  6. While the cauliflower is cooking, heat the remaining 2 tablespoons of olive oil in another skillet over medium-high heat.
  7. Once the oil is hot, carefully add the seasoned fish fillets and fry for about 3-4 minutes on each side, or until golden brown and cooked through.
  8. Remove the fish from the skillet and drain on paper towels.
  9. Serve the fried fish on a bed of cauliflower rice, garnishing with fresh parsley and a squeeze of lemon juice before serving.
