Ingredients
- White fish fillets (e.g., cod or haddock) - 300 grams
- Cauliflower - 1 medium head
- Onion - 1 large, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 4 tablespoons
- Lemon - 1, juiced
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the fish fillets under cold water and pat dry with paper towels. Season with salt, black pepper, and half of the lemon juice. Set aside.
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, coriander, and paprika to the skillet, stirring for 1 minute until fragrant.
- Add the cauliflower rice to the skillet, mixing thoroughly. Cook for 8-10 minutes, stirring occasionally, until the cauliflower is tender. Season with salt and pepper to taste.
- While the cauliflower is cooking, heat the remaining 2 tablespoons of olive oil in another skillet over medium-high heat.
- Once the oil is hot, carefully add the seasoned fish fillets and fry for about 3-4 minutes on each side, or until golden brown and cooked through.
- Remove the fish from the skillet and drain on paper towels.
- Serve the fried fish on a bed of cauliflower rice, garnishing with fresh parsley and a squeeze of lemon juice before serving.
