Ingredients

  • Eggplant - 1 medium-sized
  • Salt - 1 teaspoon
  • All-purpose flour - 1/2 cup
  • Egg - 1 large
  • Breadcrumbs - 1 cup
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Black pepper - 1/2 teaspoon
  • Olive oil - for frying

Steps

  1. Slice the eggplant into 0.5 cm thick slices and sprinkle with salt. Let it sit for about 20 minutes to draw out excess moisture.
  2. Rinse the salted eggplant slices under cold water and pat them dry with paper towels.
  3. In a shallow bowl, set up a breading station: place flour in the first bowl, beaten egg in the second bowl, and breadcrumbs in the third bowl.
  4. Dip each eggplant slice first in flour, then in the beaten egg, and finally coat with breadcrumbs. Set aside on a plate.
  5. In a mixing bowl, combine crumbled feta cheese, chopped parsley, chopped mint, and black pepper. Mix well to form the filling.
  6. Take each breaded eggplant slice, place a spoonful of the cheese mixture at one end, and roll tightly. Secure with a toothpick if necessary.
  7. Heat olive oil in a frying pan over medium heat. Fry the eggplant rolls in batches until golden brown, about 3-4 minutes per side.
  8. Remove from the pan and drain on paper towels to absorb excess oil. Serve warm.
