Ingredients
- Eggplant - 1 medium-sized
- Salt - 1 teaspoon
- All-purpose flour - 1/2 cup
- Egg - 1 large
- Breadcrumbs - 1 cup
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Black pepper - 1/2 teaspoon
- Olive oil - for frying
Steps
- Slice the eggplant into 0.5 cm thick slices and sprinkle with salt. Let it sit for about 20 minutes to draw out excess moisture.
- Rinse the salted eggplant slices under cold water and pat them dry with paper towels.
- In a shallow bowl, set up a breading station: place flour in the first bowl, beaten egg in the second bowl, and breadcrumbs in the third bowl.
- Dip each eggplant slice first in flour, then in the beaten egg, and finally coat with breadcrumbs. Set aside on a plate.
- In a mixing bowl, combine crumbled feta cheese, chopped parsley, chopped mint, and black pepper. Mix well to form the filling.
- Take each breaded eggplant slice, place a spoonful of the cheese mixture at one end, and roll tightly. Secure with a toothpick if necessary.
- Heat olive oil in a frying pan over medium heat. Fry the eggplant rolls in batches until golden brown, about 3-4 minutes per side.
- Remove from the pan and drain on paper towels to absorb excess oil. Serve warm.
