Ingredients

  • Eggplant - 1 medium (about 250g)
  • Salt - 1 teaspoon
  • All-purpose flour - ½ cup (60g)
  • Chickpea flour - ¼ cup (30g)
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Garlic powder - ½ teaspoon
  • Black pepper - ¼ teaspoon
  • Water - ¼ cup (60ml)
  • Olive oil - for frying
  • Pita bread - 2 pieces
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - a handful, chopped
  • Fresh mint - a handful, chopped
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced

Steps

  1. Slice the eggplant into 1 cm thick rounds and sprinkle both sides with salt. Let them sit for about 15 minutes to draw out moisture.
  2. Rinse the eggplant slices under cold water and pat them dry with a paper towel.
  3. In a bowl, mix the all-purpose flour, chickpea flour, cumin, coriander, garlic powder, black pepper, and water to form a batter.
  4. Heat olive oil in a frying pan over medium heat. Dip each eggplant slice into the batter, letting excess drip off, then place them in the hot oil.
  5. Fry the eggplant slices for about 3-4 minutes on each side until they are golden brown and crispy. Remove and drain on paper towels.
  6. In a small bowl, mix tahini with lemon juice and a little water to achieve a drizzling consistency.
  7. To assemble the burgers, place a fried eggplant slice in each pita, top with sliced tomato, cucumber, chopped parsley, and mint. Drizzle with tahini sauce.
  8. Serve immediately and enjoy your Fried Eggplant Burgers!
