Ingredients
- Eggplant - 1 medium (about 250g)
- Salt - 1 teaspoon
- All-purpose flour - ½ cup (60g)
- Chickpea flour - ¼ cup (30g)
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Garlic powder - ½ teaspoon
- Black pepper - ¼ teaspoon
- Water - ¼ cup (60ml)
- Olive oil - for frying
- Pita bread - 2 pieces
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley - a handful, chopped
- Fresh mint - a handful, chopped
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
Steps
- Slice the eggplant into 1 cm thick rounds and sprinkle both sides with salt. Let them sit for about 15 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat them dry with a paper towel.
- In a bowl, mix the all-purpose flour, chickpea flour, cumin, coriander, garlic powder, black pepper, and water to form a batter.
- Heat olive oil in a frying pan over medium heat. Dip each eggplant slice into the batter, letting excess drip off, then place them in the hot oil.
- Fry the eggplant slices for about 3-4 minutes on each side until they are golden brown and crispy. Remove and drain on paper towels.
- In a small bowl, mix tahini with lemon juice and a little water to achieve a drizzling consistency.
- To assemble the burgers, place a fried eggplant slice in each pita, top with sliced tomato, cucumber, chopped parsley, and mint. Drizzle with tahini sauce.
