Ingredients

  • Cauliflower - 400 grams
  • Egg - 1 large
  • Parmesan cheese - 50 grams, grated
  • Mozzarella cheese - 100 grams, shredded
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Tomato sauce - 100 grams
  • Bell pepper - 50 grams, diced
  • Red onion - 30 grams, thinly sliced
  • Kalamata olives - 30 grams, sliced
  • Fresh basil - a few leaves for garnish

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Cut the cauliflower into florets and steam until tender, about 5-7 minutes.
  3. Drain the cauliflower and let it cool slightly, then chop it finely or pulse in a food processor until it resembles rice.
  4. In a large bowl, combine the chopped cauliflower, egg, grated Parmesan, garlic powder, oregano, salt, and pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
  6. Drizzle the crust with olive oil and bake in the preheated oven for 15-20 minutes, or until golden and crispy.
  7. Remove the crust from the oven and spread tomato sauce evenly over it.
  8. Top with shredded mozzarella cheese, diced bell pepper, sliced red onion, and Kalamata olives.
  9. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh basil leaves before slicing and serving.
