Ingredients

  • Freekeh - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1 medium, diced
  • Vegetable broth - 1 liter
  • Tomato - 1 medium, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the freekeh under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat and add the diced onion, cooking until translucent, about 5 minutes.
  3. Add the minced garlic, carrot, celery, and red bell pepper to the pot, stirring frequently, cooking for another 5 minutes.
  4. Stir in the cumin and coriander, and cook for 1 minute until fragrant.
  5. Add the diced tomato and cook for an additional 2 minutes.
  6. Pour in the vegetable broth and bring to a boil.
  7. Add the freekeh to the boiling broth, reduce the heat to a simmer, and cook for 15-20 minutes, or until the freekeh is tender.
  8. Season with salt, black pepper, and lemon juice to taste.
  9. Remove from heat and stir in the chopped parsley before serving.
