- Freekeh - 100 grams
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 small, diced
- Bell pepper - 1 small, diced
- Zucchini - 1 small, diced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, for serving
Steps
- Rinse the freekeh under cold water and drain well.
- In a medium saucepan, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced carrot, bell pepper, and zucchini to the pan, and sauté for about 5 minutes until they begin to soften.
- Stir in the rinsed freekeh, cumin, cinnamon, salt, and black pepper, and cook for 1-2 minutes to toast the freekeh slightly.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and let simmer for 20 minutes or until the freekeh is tender and has absorbed the liquid.
- Remove from heat, fluff with a fork, and stir in the chopped parsley.
- Serve warm with lemon wedges on the side for squeezing over the top.
