Ingredients

  • Freekeh - 100 grams
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, diced
  • Bell pepper - 1 small, diced
  • Zucchini - 1 small, diced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, for serving

Steps

  1. Rinse the freekeh under cold water and drain well.
  2. In a medium saucepan, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the diced carrot, bell pepper, and zucchini to the pan, and sauté for about 5 minutes until they begin to soften.
  6. Stir in the rinsed freekeh, cumin, cinnamon, salt, and black pepper, and cook for 1-2 minutes to toast the freekeh slightly.
  7. Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and let simmer for 20 minutes or until the freekeh is tender and has absorbed the liquid.
  8. Remove from heat, fluff with a fork, and stir in the chopped parsley.
  9. Serve warm with lemon wedges on the side for squeezing over the top.
