Ingredients

  • fava beans - 200 grams (cooked or canned)
  • olive oil - 2 tablespoons
  • garlic - 2 cloves (minced)
  • cumin - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • paprika - 1/2 teaspoon
  • lemon juice - 1 tablespoon
  • eggs - 2 large
  • fresh parsley - 2 tablespoons (chopped)
  • chili flakes - to taste (optional)

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add the cooked fava beans to the saucepan along with cumin, salt, black pepper, paprika, and lemon juice. Stir well to combine and cook for about 5 minutes until heated through.
  3. Using the back of a spoon, create two small wells in the fava bean mixture. Crack an egg into each well.
  4. Cover the saucepan and cook for about 5 minutes or until the eggs are cooked to your liking.
  5. Once done, remove from heat and sprinkle with chopped parsley and chili flakes if desired. Serve hot with warm pita bread.
