- fava beans - 200 grams (cooked or canned)
- olive oil - 2 tablespoons
- garlic - 2 cloves (minced)
- cumin - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- paprika - 1/2 teaspoon
- lemon juice - 1 tablespoon
- eggs - 2 large
- fresh parsley - 2 tablespoons (chopped)
- chili flakes - to taste (optional)
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the cooked fava beans to the saucepan along with cumin, salt, black pepper, paprika, and lemon juice. Stir well to combine and cook for about 5 minutes until heated through.
- Using the back of a spoon, create two small wells in the fava bean mixture. Crack an egg into each well.
- Cover the saucepan and cook for about 5 minutes or until the eggs are cooked to your liking.
- Once done, remove from heat and sprinkle with chopped parsley and chili flakes if desired. Serve hot with warm pita bread.
