- Basmati rice - 1 cup (200 grams)
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Tomatoes, diced - 2 medium
- Olive oil - 3 tablespoons
- Vegetable broth - 2 cups (500 ml)
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for about 20 minutes.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant. Stir in the diced tomatoes, ground cumin, and ground coriander. Cook for about 5 minutes, allowing the tomatoes to soften.
- Drain the soaked rice and add it to the skillet, stirring to coat with the tomato mixture. Pour in the vegetable broth and season with salt and black pepper to taste. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and has absorbed the liquid.
- While the rice is cooking, heat the remaining tablespoon of olive oil in a separate pan over medium heat. Season the fish fillets with salt, pepper, and lemon juice, then cook for approximately 3-4 minutes on each side, or until cooked through and flaky.
- Once the rice is done, fluff it with a fork and stir in the chopped parsley. Serve the rice topped with the cooked fish, and garnish with additional parsley and lemon wedges if desired.
