- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato - 1 medium, diced
- Vegetable broth - 500 milliliters
- Water - 250 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon

Steps

- Stir in the diced tomato, cumin, paprika, salt, and black pepper. Cook for another 2 minutes until the tomatoes start to break down.
- Pour in the vegetable broth and water, bringing the mixture to a gentle boil. Reduce heat and let it simmer for 10 minutes.
- Add the fish fillets to the pot and cook for an additional 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
- Stir in the fresh parsley and lemon juice just before serving. Adjust seasoning with more salt and pepper if needed.
- Ladle the soup into bowls and serve warm, garnished with extra parsley if desired.
