Ingredients

  • White fish fillets (e.g., cod or haddock) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 milliliters
  • Water - 250 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic, diced carrot, and diced celery to the pot. Cook for an additional 5 minutes until the vegetables soften.
  3. Stir in the diced tomato, cumin, paprika, salt, and black pepper. Cook for another 2 minutes until the tomatoes start to break down.
  4. Pour in the vegetable broth and water, bringing the mixture to a gentle boil. Reduce heat and let it simmer for 10 minutes.
  5. Add the fish fillets to the pot and cook for an additional 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Stir in the fresh parsley and lemon juice just before serving. Adjust seasoning with more salt and pepper if needed.
  7. Ladle the soup into bowls and serve warm, garnished with extra parsley if desired.
