Ingredients

  • White fish fillets (e.g., cod or haddock) - 300 grams
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Tomato - 1 medium, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 2 tablespoons
  • Vegetable broth - 400 milliliters
  • Lemon - 1, juiced
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes before draining.
  2. In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced tomato to the pan, cooking for an additional 2-3 minutes until the tomato softens.
  4. Stir in the cumin, coriander, turmeric, salt, and black pepper, cooking for another minute to release the spices' aromas.
  5. Add the drained rice to the pan and stir well to coat the rice with the spices and onion mixture.
  6. Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  7. While the rice is cooking, season the fish fillets with salt, pepper, and lemon juice.
  8. In a separate skillet, heat a little olive oil over medium heat and cook the fish fillets for about 3-4 minutes on each side until golden and cooked through.
  9. Once the rice is done, fluff it with a fork and serve it on plates topped with the fish fillets.
  10. Garnish with fresh parsley and a squeeze of lemon juice before serving.
