Ingredients
- white fish fillets (e.g., cod or haddock) - 300 grams
- medium onion - 1, finely chopped
- garlic cloves - 2, minced
- medium tomato - 1, diced
- long-grain rice - 150 grams
- water - 400 milliliters
- ground cumin - 1 teaspoon
- ground coriander - 1 teaspoon
- ground turmeric - 1/2 teaspoon
- ground black pepper - 1/2 teaspoon
- salt - 1 teaspoon
- olive oil - 2 tablespoons
- fresh parsley - 2 tablespoons, chopped
- lemon wedges - for serving
Steps
- Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced tomato, cumin, coriander, turmeric, black pepper, and salt. Cook for about 5 minutes until the tomatoes soften.
- Add the rice to the pan and stir to coat with the spice mixture. Cook for 2-3 minutes until the rice is slightly toasted.
- Pour in the water and bring to a boil. Reduce heat to low, cover the pan, and simmer for 15 minutes until the rice is cooked and the water is absorbed.
- While the rice is cooking, season the fish fillets with salt and a sprinkle of black pepper.
- In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the fish fillets and cook for about 3-4 minutes on each side until golden and cooked through.
- Once the rice is done, fluff it with a fork. Serve the rice on plates, topped with the cooked fish.
- Garnish with chopped parsley and serve with lemon wedges on the side.
