Ingredients

  • White fish fillets (e.g., cod or halibut) - 300 grams
  • Red onion - 1 medium, cut into wedges
  • Bell pepper (any color) - 1 medium, cut into squares
  • Zucchini - 1 medium, sliced into rounds
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini - 3 tablespoons
  • Water - 2 tablespoons
  • Additional lemon juice - 1 tablespoon

Steps

  1. In a bowl, combine olive oil, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper to create a marinade.
  2. Cut the fish fillets into 2.5 cm cubes and add them to the marinade, ensuring they are well coated. Marinate for at least 15 minutes.
  3. Prepare skewers by alternating pieces of marinated fish with red onion, bell pepper, and zucchini.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Grill the skewers for about 8-10 minutes, turning occasionally, until the fish is cooked through and the vegetables are tender.
  6. While the kebabs are grilling, prepare the tahini sauce by mixing tahini, water, and additional lemon juice in a small bowl until smooth.
  7. Serve the fish kebabs hot, drizzled with tahini sauce and garnished with chopped parsley.
