Fish Kebabs

- White fish fillets (e.g., cod or halibut) - 300 grams
- Red onion - 1 medium, cut into wedges
- Bell pepper (any color) - 1 medium, cut into squares
- Zucchini - 1 medium, sliced into rounds
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Tahini - 3 tablespoons
- Water - 2 tablespoons
- Additional lemon juice - 1 tablespoon
Steps
- In a bowl, combine olive oil, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper to create a marinade.
- Cut the fish fillets into 2.5 cm cubes and add them to the marinade, ensuring they are well coated. Marinate for at least 15 minutes.
- Prepare skewers by alternating pieces of marinated fish with red onion, bell pepper, and zucchini.
- Preheat the grill or grill pan over medium-high heat.
- Grill the skewers for about 8-10 minutes, turning occasionally, until the fish is cooked through and the vegetables are tender.
- While the kebabs are grilling, prepare the tahini sauce by mixing tahini, water, and additional lemon juice in a small bowl until smooth.
- Serve the fish kebabs hot, drizzled with tahini sauce and garnished with chopped parsley.
