- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Pita bread - 2 pieces
- Tahini - 3 tablespoons
- Water - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Pickled turnips - 50 grams, sliced
Steps
- In a bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, salt, and black pepper to create a marinade.
- Cut the white fish fillets into bite-sized pieces and add them to the marinade. Toss to coat and let marinate for at least 15 minutes.
- While the fish is marinating, prepare the tahini sauce by mixing tahini with water until smooth. Adjust the consistency with more water if needed and set aside.
- Preheat a grill or grill pan over medium heat. Thread the marinated fish pieces onto skewers.
- Grill the fish kebabs for about 3-4 minutes on each side, or until cooked through and lightly charred.
- While the fish is grilling, warm the pita bread on the grill for about 1 minute on each side.
- To assemble the sandwich, place the grilled fish kebabs in the pita, and top with diced tomato, cucumber, pickled turnips, and a generous drizzle of tahini sauce.
- Sprinkle chopped parsley on top for garnish and serve immediately.
