Ingredients

  • White fish fillets (cod or haddock) - 300 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Pita bread - 2 pieces
  • Tahini - 3 tablespoons
  • Water - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Pickled turnips - 50 grams, sliced

Steps

  1. In a bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, salt, and black pepper to create a marinade.
  2. Cut the white fish fillets into bite-sized pieces and add them to the marinade. Toss to coat and let marinate for at least 15 minutes.
  3. While the fish is marinating, prepare the tahini sauce by mixing tahini with water until smooth. Adjust the consistency with more water if needed and set aside.
  4. Preheat a grill or grill pan over medium heat. Thread the marinated fish pieces onto skewers.
  5. Grill the fish kebabs for about 3-4 minutes on each side, or until cooked through and lightly charred.
  6. While the fish is grilling, warm the pita bread on the grill for about 1 minute on each side.
  7. To assemble the sandwich, place the grilled fish kebabs in the pita, and top with diced tomato, cucumber, pickled turnips, and a generous drizzle of tahini sauce.
  8. Sprinkle chopped parsley on top for garnish and serve immediately.
