Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • White fish fillets (e.g., cod or haddock) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 small
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 small
  • Bell pepper, diced - 1/2 medium
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon, juiced - 1 medium
  • Pine nuts, toasted - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced carrot, and bell pepper to the pan. Cook for an additional 3-4 minutes until the vegetables are softened.
  4. Stir in the ground cumin, ground coriander, salt, and black pepper, cooking for another minute to release the spices' aromas.
  5. Drain the soaked rice and add it to the saucepan. Stir well to coat the rice with the oil and spices.
  6. Pour in 300 milliliters of water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is cooked and water is absorbed.
  7. While the rice cooks, season the fish fillets with salt, pepper, and lemon juice. In a separate skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat.
  8. Add the fish fillets to the skillet and cook for about 3-4 minutes on each side, or until golden and cooked through.
  9. Once the rice is ready, fluff it with a fork and stir in the chopped parsley and toasted pine nuts.
  10. Serve the fish over the rice pilaf, garnished with extra parsley if desired.
