- Basmati rice - 150 grams
- Water - 300 milliliters
- White fish fillets (e.g., cod or haddock) - 200 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 small
- Garlic, minced - 2 cloves
- Carrot, diced - 1 small
- Bell pepper, diced - 1/2 medium
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley, chopped - 2 tablespoons
- Lemon, juiced - 1 medium
- Pine nuts, toasted - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, and bell pepper to the pan. Cook for an additional 3-4 minutes until the vegetables are softened.
- Stir in the ground cumin, ground coriander, salt, and black pepper, cooking for another minute to release the spices' aromas.
- Drain the soaked rice and add it to the saucepan. Stir well to coat the rice with the oil and spices.
- Pour in 300 milliliters of water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is cooked and water is absorbed.
- While the rice cooks, season the fish fillets with salt, pepper, and lemon juice. In a separate skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat.
- Add the fish fillets to the skillet and cook for about 3-4 minutes on each side, or until golden and cooked through.
- Once the rice is ready, fluff it with a fork and stir in the chopped parsley and toasted pine nuts.
- Serve the fish over the rice pilaf, garnished with extra parsley if desired.
