- Basmati rice - 150 grams

- Garlic, minced - 2 cloves
- Tomato, diced - 1 medium
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 400 milliliters
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced tomato, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another 3-4 minutes, allowing the flavors to meld.
- Add the basmati rice to the skillet and stir to coat the rice with the spice mixture.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes, or until the rice is cooked and has absorbed the liquid.
- While the rice is cooking, season the fish fillets with salt and black pepper. In a separate pan, heat a little olive oil over medium heat and cook the fish for about 3-4 minutes on each side, or until cooked through and flaky.
- Once the rice is done, fluff it with a fork and stir in the chopped parsley and lemon juice.
- Serve the fish on a bed of the spiced rice, garnished with additional parsley if desired.
