Ingredients

  • Cherry tomatoes - 100g
  • Fresh parsley - 30g
  • Lemon juice - 2 tablespoons (30ml)
  • Olive oil - 1 tablespoon (15ml)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Trim the fennel bulb by removing the stalks and fronds, then slice it thinly using a mandoline or sharp knife.
  2. Slice the cucumber into thin rounds and halve the cherry tomatoes.
  3. Finely chop the fresh parsley and set aside.
  4. In a large mixing bowl, combine the sliced fennel, cucumber, cherry tomatoes, and chopped parsley.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to make the dressing.
