Ingredients

  • Fennel bulb - 1 medium (approximately 200g)
  • Oranges - 2 medium (approximately 300g)
  • Fresh parsley - 30g, chopped
  • Red onion - 1 small, thinly sliced
  • Olive oil - 2 tablespoons (30ml)
  • Lemon juice - 1 tablespoon (15ml)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pomegranate seeds - 30g (optional) for garnish

Steps

  1. Trim the fennel bulb by removing the stalks and fronds, then slice it thinly using a sharp knife or mandoline.
  2. Peel the oranges, removing all the white pith, and cut them into segments, discarding any seeds.
  3. In a large bowl, combine the sliced fennel, orange segments, chopped parsley, and red onion.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  5. Pour the dressing over the salad and toss gently to combine all the ingredients.
