Ingredients
- Dried fava beans - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Vegetable broth - 800 ml
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the dried fava beans under cold water and soak them in water for at least 4 hours or overnight.
- Drain and rinse the soaked fava beans, then place them in a pot with 800 ml of vegetable broth. Bring to a boil, then reduce heat and simmer for about 30 minutes or until the beans are tender.
- In a separate skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery, sautéing until the vegetables are soft and the onion is translucent, about 5-7 minutes.
- Add the cumin and coriander to the skillet, stirring for another minute until fragrant.
- Once the fava beans are cooked, add the sautéed vegetables to the pot with the beans. Stir well and let simmer for an additional 10 minutes.
- Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, you can blend only half of the soup.
- Stir in the lemon juice, chopped parsley, salt, and black pepper to taste. Simmer for another 5 minutes.
- Serve hot, garnished with additional parsley and a drizzle of olive oil if desired.
