Ingredients

  • Dried fava beans - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Vegetable broth - 800 ml
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the dried fava beans under cold water and soak them in water for at least 4 hours or overnight.
  2. Drain and rinse the soaked fava beans, then place them in a pot with 800 ml of vegetable broth. Bring to a boil, then reduce heat and simmer for about 30 minutes or until the beans are tender.
  3. In a separate skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery, sautéing until the vegetables are soft and the onion is translucent, about 5-7 minutes.
  4. Add the cumin and coriander to the skillet, stirring for another minute until fragrant.
  5. Once the fava beans are cooked, add the sautéed vegetables to the pot with the beans. Stir well and let simmer for an additional 10 minutes.
  6. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, you can blend only half of the soup.
  7. Stir in the lemon juice, chopped parsley, salt, and black pepper to taste. Simmer for another 5 minutes.
  8. Serve hot, garnished with additional parsley and a drizzle of olive oil if desired.
