Ingredients

  • Dried fava beans - 200 grams
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Red onion - 50 grams, finely diced
  • Tomato - 1 medium (about 150 grams), diced
  • Cucumber - 1 small (about 100 grams), diced
  • Lemon juice - 30 ml
  • Olive oil - 15 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic - 1 clove, minced

Steps

  1. Rinse the dried fava beans under cold water and soak them in plenty of water for at least 8 hours or overnight.
  2. Drain the soaked fava beans and place them in a pot with fresh water. Bring to a boil, then reduce heat and simmer for 30-40 minutes until the beans are tender.
  3. Once cooked, drain the fava beans and let them cool to room temperature.
  4. In a large mixing bowl, combine the cooked fava beans, chopped parsley, chopped mint, diced red onion, diced tomato, and diced cucumber.
  5. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and black pepper to create the dressing.
  6. Pour the dressing over the salad and gently mix until all ingredients are well combined.
  7. Serve the salad chilled or at room temperature, garnished with additional herbs if desired.
