Ingredients
- Dried fava beans - 200 grams
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Red onion - 50 grams, finely diced
- Tomato - 1 medium (about 150 grams), diced
- Cucumber - 1 small (about 100 grams), diced
- Lemon juice - 30 ml
- Olive oil - 15 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic - 1 clove, minced
Steps
- Rinse the dried fava beans under cold water and soak them in plenty of water for at least 8 hours or overnight.
- Drain the soaked fava beans and place them in a pot with fresh water. Bring to a boil, then reduce heat and simmer for 30-40 minutes until the beans are tender.
- Once cooked, drain the fava beans and let them cool to room temperature.
- In a large mixing bowl, combine the cooked fava beans, chopped parsley, chopped mint, diced red onion, diced tomato, and diced cucumber.
- In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and black pepper to create the dressing.
- Pour the dressing over the salad and gently mix until all ingredients are well combined.
- Serve the salad chilled or at room temperature, garnished with additional herbs if desired.
