- Firm tofu - 200 grams
- Pita bread - 1 medium
- Cucumbers - 1 medium, diced
- Tomatoes - 2 medium, diced
- Radishes - 4, thinly sliced
- Green onions - 2, chopped
- Parsley - 1/4 cup, chopped
- Mint leaves - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Sumac - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Garlic - 1 clove, minced
Steps
- Press the tofu to remove excess moisture, then cut it into cubes.
- In a bowl, combine lemon juice, olive oil, minced garlic, salt, black pepper, and sumac to make a marinade.
- Add the tofu cubes to the marinade and let them sit for at least 15 minutes.
- While the tofu marinates, preheat the oven to 180°C (350°F).
- Cut the pita bread into triangles and place them on a baking sheet. Bake for about 10-12 minutes or until golden and crispy.
- In a large bowl, combine the diced cucumbers, tomatoes, radishes, green onions, parsley, and mint leaves.
- Once the tofu has marinated, heat a non-stick skillet over medium heat and cook the tofu for about 5-7 minutes, turning until golden brown.
- Add the cooked tofu to the bowl of vegetables and gently mix.
- Crumble the pita chips over the salad, toss everything together, and adjust seasoning if necessary before serving.
