Ingredients

  • Firm tofu - 200 grams
  • Pita bread - 1 medium
  • Cucumbers - 1 medium, diced
  • Tomatoes - 2 medium, diced
  • Radishes - 4, thinly sliced
  • Green onions - 2, chopped
  • Parsley - 1/4 cup, chopped
  • Mint leaves - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Garlic - 1 clove, minced

Steps

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. In a bowl, combine lemon juice, olive oil, minced garlic, salt, black pepper, and sumac to make a marinade.
  3. Add the tofu cubes to the marinade and let them sit for at least 15 minutes.
  4. While the tofu marinates, preheat the oven to 180°C (350°F).
  5. Cut the pita bread into triangles and place them on a baking sheet. Bake for about 10-12 minutes or until golden and crispy.
  6. In a large bowl, combine the diced cucumbers, tomatoes, radishes, green onions, parsley, and mint leaves.
  7. Once the tofu has marinated, heat a non-stick skillet over medium heat and cook the tofu for about 5-7 minutes, turning until golden brown.
  8. Add the cooked tofu to the bowl of vegetables and gently mix.
  9. Crumble the pita chips over the salad, toss everything together, and adjust seasoning if necessary before serving.
