Ingredients

  • Radishes - 4, thinly sliced
  • Green bell pepper - 1/2, diced
  • Red onion - 1/4, thinly sliced
  • Pomegranate seeds - 1/2 cup
  • Pita bread - 1 small, cut into triangles
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Arrange the pita bread triangles on a baking sheet and lightly brush with olive oil. Bake for about 5-7 minutes or until golden and crispy.
  3. In a large bowl, combine the chopped romaine, cucumber, tomato, radishes, green bell pepper, and red onion.
  4. Add the pomegranate seeds and chopped parsley to the bowl.
  5. In a small bowl, whisk together olive oil, lemon juice, sumac, salt, and pepper to create the dressing.
  6. Pour the dressing over the salad and toss gently to combine.
